I’m all about making my life with diabetes as easy as possible. One way to do this is have make ahead foods in the refrigerator, especially for breakfast when we are all in a hurry to get to school and work. Mornings can be super hectic if we are trying to make a healthy, low carb breakfast and don’t have a plan.
This recipe can be made on the weekend, make tons and feed the whole family all week! I’m a busy mom and I know you are busy too, make life easy and batch your breakfasts for real.
In this version of the recipe I used a couple slices of salami to flavor the egg whites, but you can use whatever you have, turkey, ham, even bacon:) My egg whites look a little pink because of the salami, but who cares, they taste delicious!! You could change the spices too, add jalapeño and make them spicy breakfast egg clouds, yumm!!

- 4 eggs
- 2 slices salami chop finely and I used low sodium salami
- 1/8 cup Parmesan cheese which I forgot when I made these
- 1 tsp garlic powder I used a blend that has some other spices too
Ingredients

- Preheat the oven to 450.
- Separate Eggs. Whip the egg whites up until they form stiff peaks. Do yourself a favor and use an electric mixer. I tried wishing myself and got tired and pulled out the hand mixer.
- Fold in salami, garlic seasoning and parmesan cheese.
- Create mounds on parchment paper, add a well in the middle for the yolk. Cook the egg white mounds for 3 minutes.
- Take out of the oven and add one yolk per egg white mound. Return to the oven for 4-8 minutes depending on your preference for the doneness of your yolk.
- Remove from the oven and enjoy:) Or put in the refrigerator to pull out and eat all week!!
