This recipe is by far my family’s favorite dinner, I swear they’d eat it several nights a week. I like this easy mediterranean chicken recipe because it’s so easy!! The ingredients are chicken breasts, olive oil, garlic powder, paprika, chili powder and cayenne if you like it spicy. Lately, I’ve been adding the trader joe’s citrus garlic spice as well, it adds a brightness. If you wanted to add other things you could add citrus zest and real garlic, but I try to keep my recipes as simple as possible while still being delicious.
The recipe is this easy, chop up the chicken into cubes, add olive oil, a bunch of dried spices from my cabinet, let it sit 10-15 minutes and then sauté it up in a frying pan. Is that the easiest recipe ever or what? You can squeeze a lemon over the top if you like as well, I like that, but not everyone of my family members loves lemon juice, so I serve the lemon wedges on the side.
I usually eat the Mediterranean chicken as a low carb dinner with either salad, cucumbers, pickles, feta and hummus. My husband usually uses half a Joseph’s wrap for a low carb wrap and he adds sriracha to his wrap for a spicy kick and then my kids eat it as a wrap as well.

This easy Mediterranean chicken recipe is one of my family's favorite dinners. I swear I could make this recipe a few times a week and everyone would be happy! It only has a few ingredients and it's a quick dinner to prepare.

- 1 tsp cayenne if you like spice
- 1 lemon for squeezing on the chicken
Chop up the chicken breasts.
Add olive oil and mix around in a bowl.
Add all the spices: paprika, garlic powder, chili powder & cayenne (totally optional) and mix around. I've been adding the citrus garlic spice from trader joes as well, about 1 Tbs.
Let the chicken sit in the spices for 10-15 minutes in the fridge.
Sauté the chicken up until cooked throughout. We like to cook it on medium to high heat to get more charred chicken edges, but that's just how we like it.
