Roasted Kale aka Kale Chips – Chips for Diabetes
I’m not sure about you, but while I’ve been living with diabetes for the last 15 years, I pretty much avoid buying chips. Of course if I’m at a party, I consider them a special treat, but on the regular, I don’t eat them because there isn’t any nutritional value and it’s just carbs. So when I decided to finally use my kale from the garden I made roasted kale aka kale chips, what perfect chips for diabetes!!
I had tried to make them before and maybe I was using the wrong kale, or maybe I didn’t have the oven hot enough, but they didn’t turn out until this last attempt.
They are so simple, I started with kale from my garden, ripped the leaves off the stems and then put them on a sheet pan (covered with foil because I hate cleaning the sheet pan), with some avocado oil and seasonings sprinkled on and I roasted the kale. The result was DELISH!!
The first time I made them, I used a lime chili sea salt and then when I pulled them out of the oven I squeezed some lemon juice on the kale chips because I like citrus and I also had a ton of lemons on our tree this year.
The next time I made them, I used garlic powder, onion powder and Italian seasoning, which also turned out great!! I was thinking of trying a chili powder variation with chili powder, cumin and then lime juice at the end. Almost like taco kale chips:)

- 1 bunch kale
- 3 Tbs avocado oil you could substitute olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp italian seasoning
- 1/2 lemon squeeze on at the end
Ingredients

- Preheat the oven to 425 degrees.
- Rip the kale from the stems.
- Oil the sheet pan with about 1/2 the oil on the pan. Spread the kale out and mix it with the remaining oil.
- Sprinkle with the seasonings in the recipe or your choice of seasonings. Mix around until all the leaves are coated.
- Bake for 10 minutes or until the edges are all crispy:) Squeeze lemon on the kale chips & enjoy:)
