Cauliflower fried rice recipeThis is seriously my favorite recipe right now… cauliflower fried rice!!  This cauliflower fried rice recipe is so simple and delicious!! A perfect addition to any diabetic diet.

Have you wondered what you could substitute for white rice? Or even brown rice?? Rice just plain has too many carbohydrates for most diabetics.  That includes me!! Rice raises my blood sugar more than most foods and it’s the worst!! So I started looking for alternatives that are low carb and fit in my low carb lifestyle.  That’s when I found cauliflower rice.

I buy the frozen version so we don’t waste any.  I’ve found the fresh cauliflower rice seems to go bad pretty quickly and my dinner plans don’t always go as planned, I’m sure you are similar.

This is one veggie that I always have in my freezer and it saves me all the time!! It’s great with tons of condiments, but it’s the easiest veggie side to make too!!

Low carb cauliflower fried rice… it’s just YUMM!! Even my kids will eat it… happily!!

Instructions
  1. Steam cauliflower rice in the microwave using the instructions. If you prefer, you can add cauliflower rice to avocado oil and cook for 6-7 minutes prior to the rest of the recipe.

  2. In a pan, add avocado oil and cauliflower rice, stir.

  3. Push rice to edges of pan, crack eggs in the middle of the pan. Start to scramble the eggs. Mix egg with cauliflower rice.
  4. Add stir fry veggies, and a couple tbs of water to cook veggies. Cook for 4-5 minutes.

  5. Add coconut aminos, stir. Add ginger powder and frozen peas (if you are using).
  6. Add toasted sesame oil, stir. Test the rice for doneness, once all mixed and cooked... ENJOY. Add hot sauce & serve:)
