Cauliflower Fried rice is life changing!! This healthy, low carb fried rice recipe is perfect as a side dish, or add some protein to make this a complete meal!!
Steam cauliflower rice in the microwave using the instructions. If you prefer, you can add cauliflower rice to avocado oil and cook for 6-7 minutes prior to the rest of the recipe.
In a pan, add avocado oil and cauliflower rice, stir.
Push rice to edges of pan, crack eggs in the middle of the pan. Start to scramble the eggs. Mix egg with cauliflower rice.
Add stir fry veggies, and a couple tbs of water to cook veggies. Cook for 4-5 minutes.
Add coconut aminos, stir. Add ginger powder and frozen peas (if you are using).
Add toasted sesame oil, stir. Test the rice for doneness, once all mixed and cooked… ENJOY.
Add hot sauce & serve:)
