Healthy Chicken Meatball Recipe – Diabetic Mediterranean Meatballs
This healthy chicken meatball recipe is one of my family’s favorite to eat in a pita!! Since I eat a little more low-carb I enjoy them in lettuce leaves as lettuce wraps!!
Serve the Mediterranean meatballs with cucumbers, tomatoes and a super easy Tzatziki sauce made with plain greek yogurt!!

Ingredients
Chicken Meatballs
- 1 lb ground chicken substitue lean ground turkey (if you don't have chicken)
- 3/4 cup chopped spinach thawed from frozen
- 1/2 cup feta cheese crumbled
- 1 Tbs italian seasoning substitute lemon pepper if you like it
- 1 Tbs granulated onion
- 1 Tbs garlic powder
- 1 egg
Tzatziki sauce
- 1/2 cup plain greek yogurt
- 1/2 lemon juiced
- 1/2 cup cucumbers diced

Instructions
Chicken Meatballs
- Mix chicken, spinach, feta, Italian seasoning, granulated onion, garlic power and egg with hands in a large bowl.
- Ball one inch meatballs. Place on greased sheet pan. (the grate isn't necessary and is probably messier to clean up)
- Bake at 400 degrees for 30 minutes.
- Serve on lettuce with cucumbers, tomatoes, peppers and Tzatziki sauce.

- Mix yogurt, lemon and diced cucumbers:)

For the meatballs, I added spinach & used ground turkey because it’s what I had in my refrigerator:)
