Baked Low Sugar Teriyaki Chicken Recipe – Diabetic Teriyaki Chicken

Most teriyaki sauces that are store bought will contain a ton of sugar (aka carbohydrates). This has always frustrated me because I love teriyaki chicken and used to eat it with white rice, but since I’ve been diabetic, that’s changed. Now I substitute the rice for cauliflower rice. It’s tough to find a healthy teriyaki chicken recipe that is also low sugar / low carbs, this makes teriyaki chicken seem like a food that isn’t great for diabetes. But, this diabetic teriyaki chicken contains no added sugar, it is all flavor and a baked teriyaki chicken version!!
This is a perfect low-carb teriyaki chicken recipe, with no added sugar at all!! The flavors are delicious, I like to dip the chicken in either toasted sesame oil or hot sauce (sriracha is my fave!!).

- 2 lbs chicken breasts cut into strips
- 1/4 cup soy sauce alternative (I like the soy amino acids)
- 1/8 cup avocado oil
- 1 Tbs ginger powder
- 2 Tbs garlic powder or tube garlic
- 1/8 cup white vinegar or rice wine vinegar
- 1 Tbs dijon mustard

- Add all ingredients to a bowl or zip top bag.
- Place in refrigerator for 30 minutes to marinate.
- Preheat oven to 400 degrees.
- Place chicken pieces on a greased sheet pan.
- Sprinkle with sesame seeds (optional).
- Bake for 30-35 minutes until done.
- Serve with cauliflower fried rice or stir fry veggies.
