Healthy Asian Turkey Meatballs – such an easy asian turkey meatball recipe:)

Have you ever craved hot sauce, specifically Sriracha?  That’s how this recipe started, I wanted sriracha, which usually I eat with some sort of asian chicken, but I had a package of ground turkey thawed, so I improvised and it worked!! (Not all my recipes turn out or even make it into our dinner rotation.)  I decided meatballs are easy to bake in the oven, then I created a sauce to go with them.  Disclaimer: the sauce isn’t terribly thick because most thick sauces include sugar to create that texture.

I was thinking of accompaniments and of course cauliflower fried rice is a super favorite at our house and it’s simple to make, so that’s the story behind this recipe.

Here’s what the cauliflower rice looks like in the pan.  If I’m being fancy or have more time, I’ll add carrots, broccoli and snap peas.  The bag of stir fry veggies works too.  The cauliflower comes frozen and for the fried rice I use the cauliflower medley, so it has peas and tiny carrot pieces.  You can add more greens too, I’ve added kale or swiss chard from my garden.  The choice of greens changes seasonally at my house based on the greens I have in the garden.

Back to the healthy asian turkey meatballs, they are super easy to make.  I add chopped red peppers to the ground turkey, along with ginger (I’ve used the tube ginger from the produce section or dried ground ginger, both work perfectly), some garlic powder, onion powder, dijon mustard and green onions if I have them.  Ball the meatballs and bake them, see super simple, right?

For the sauce, I use my asian pantry staples: white vinegar, soy sauce or amino acid soy replacement, toasted sesame oil (btw if you’ve never had toasted sesame oil, it is the most delicious ingredient for asian food and definitely worth having in the pantry), peanut butter and sriracha, if you’re good with a kick.

I’ve served the asian turkey meatballs a couple different ways.  One way is as a lettuce wrap.  Sometimes the lettuce from my garden doesn’t quite hold up to being a wrap, but here’s how the lettuce wrap looked.

For my kids plate, they add the cauliflower fried rice, meatballs and sometimes a veggie if we have one they like.  Here’s the kid’s plate.

Instructions
Meatballs
  1. Preheat the oven to 400 degrees. Add turkey, diced red peppers, green onions, egg, dijon, ginger, garlic and onion powder to a bowl and mix until combined.
  2. Ball meatballs in 2 oz meatballs and place on a rack on a baking sheet or directly on the baking sheet. I prefer a rack because they seem to drain the excess liquid, but it's not necessary. Bake for 30 minutes at 400 degrees.

  1. Mix all ingredients until combined.
