Sweet Potatoes for Diabetics
I don’t know about you, but I sure do love sweet potatoes and yams, the problem is every time I eat them, my sugars sky rocket. I was looking for an alternative to sweet potatoes for diabetics. I was thrilled to find butternut squash has half the calories, carbs and sugar of sweet potatoes, here’s a link with the full nutritional value.
You know what’s even funnier, is I don’t tell my kids that we are eating squash. I just say it’s sweet potato and everyone is happy:) The other benefit of this version of ‘sweet potatoes for diabetics’ is I can buy it already cut either frozen or fresh and it’s ready to cook. That is my kind of veggie!!
For this recipe I bought Mann’s pre-cut butternut squash that look like crinkle fries. I actually have been trying a bunch of the mann products because they are ready to go and healthy veggies.

- 1 bag pre-cut butternut squash I used the crinkle fry ones, but you could totally use pre-cut squares
- 1/8 cup avocado oil
- 1 lime
- 1 Tbs chili powder
- 1/2 tsp red chili flakes
- 1 Tbs cilantro as a garnish

- Mix the squash, oil and chili powder together in a bowl, in a zip top bag or even on the sheet pan.
- Cook the coated squash on a sheet pan with foil (for an easier clean up) for 20-25 minutes at 400 degrees. If you like them crispier, put under the broiler for a few minutes or until toasty looking.
- Serve with your favorite dipping sauce. I'm really loving this yogurt ranch I found at my supermarket. Enjoy:)

You can use whichever chicken broth you like. I usually buy either low sodium or no salt:)
