Tandoori Chicken Skewer Recipe – Healthy Diabetic Recipe
I’m not sure about you, but when I was a kid, skewer dinners or kebab dinners were my fave!! They had so much flavor and I even ate the veggies. I decided I wanted to try a new take on the skewers, this is a great tandoori chicken skewer recipe and a perfect recipe for diabetics:)
When I was young, my Mom would marinate the meat in Italian dressing, which is delicious on it’s own too!! However, in the past few years, I’ve been making my own salad dressings in a healthy fashion because most of the store bought salad dressings oils I’d rather not eat and other ingredients that I’d like to avoid if possible. Here’s my salad dressing recipe, if you want to make Italian seasoned chicken, it’s a good recipe too!!
Usually, when I’m making dressing I use either avocado oil or olive oil for all the good fats, so that’s the real difference between store bought and homemade. Check out the recipe if you want to try it out:) You can totally add your own flair too.
Back to the tandoori chicken skewer recipe, this recipe uses plain yogurt, I used plain greek yogurt with some spices and then the sauce is so easy too! It’s plain greek yogurt, lemon juice and cucumber all mixed up to top on your tandoori chicken skewers.
I like to serve these chicken skewers with cucumbers or a super simple salad. If I chose a simple salad, I’d add lettuce, cucumber and tomatoes, but you could add whatever you like and use my homemade italian dressing or lemon juice and oil only. I wrap my chicken up in lettuce wraps, but for kids I usually have some pita bread, they need more carbs than I do:) Enjoy!!

- 1 lb boneless skinless chicken breasts diced to equal sized cubes
- 1 cup plain greek yogurt substitute plain yogurt if you don't have greek
- 1/4 chopped cucumber diced
- 2 tsp lemon juice
- 2 tsp ginger powder you can use fresh if you have it
- 1 Tbs garam masala spice found in the spice aisle of the supermarket
- 1/4 tsp cayenne Optional - I omit because the kids won't eat anything spicy
- 1 lemon for lemon wedges (optional)

- Soak your skewers if using wood. Cut the chicken breasts into equal sized cubes.
- Mix 1/2 cup yogurt, ginger, garam masala and cayenne (optional), then apply to the chicken.
- Add chicken to skewers not crowding the chicken too much.
- Grill the chicken until done, turning at least once.
- While the chicken is grilling, mix 1/2 cup yogurt, lemon juice and diced cucumber to make the sauce (raita sauce).
- Once chicken is done, you can use lemon slices to squeeze over the chicken with the raita sauce. I like to wrap my chicken in lettuce leaves, butter seems to be the most flexible. Enjoy:)
