Low Carb Lasagna Recipe – Zucchini Lasagna Recipe – Diabetic Lasagna
This is a great low carb lasagna recipe – zucchini lasagna recipe to be exact. It uses zucchini sliced thin instead of the traditional full of carb noodles, this is a great diabetic lasagna recipe!!
When I made this recipe, I totally took a video of making it, oh and it was the first time I made this one. Usually I create a recipe, then perfect it and put it on the blog, but you know what?? I’m diabetic too and all these test runs are still low carb and I need to eat too:) I loved this low carb lasagna recipe!!
My family loved this low carb lasagna recipe. I used italian ground turkey, which has some flavoring added to it and while this type of meat isn’t usually my favorite (because who knows what all was added), it was the perfect flavor necessary for a lasagna.
I used a ton of cheese too, so if you are living a low sodium life in addition to the low carb lifestyle, just choose a low sodium cheese. You could swap out the ricotta cheese for low sodium cottage cheese (it’s budget friendly too) and then choose a low sodium mozarella. Also, in the video I added the rest of the jarred sauce (i wouldn’t do that again because it got a little soupy). It still tasted AMAZING!! I just couldn’t get a photo of a slice of the lasagna because it looked like soup on a plate:)
Back to the zucchini lasagna being a little soupy, this didn’t bother me or my family, everyone still ate it!! One of my readers suggested roasting the zucchini first and you could totally do that, but let’s be honest, I’m a one step kind of low carb cook, so I’m definitely not roasting the zucchini and dirtying a pan as a first step.

- 1 large zucchini sliced thin lengthwise
- 2 cups Ricotta cheese
- 2 cup marinara sauce I always choose the lowest sugar one I can find
- 1 lb lean ground turkey I chose the Italian flavored one
- 2 cups mozarella cheese shredded
- 1/2 cup Parmesan cheese You can use more to sprinkle on top if you like

- Brown the ground turkey. Once cooked add 1 cup of marinara to the turkey and set aside.
- Mix 2 cups ricotta with 1 cup of marinara sauce.
- Grab your baking dish, mine was 9x11 and spray it with cooking spray.
- Line the bottom with a layer of the thinly sliced zucchini slices.
- Add a layer of the ground turkey mixture (about half of it).
- Add a layer of the ricotta mixture (about half of it).
- Add a layer of zucchini slices, the rest of the turkey and the rest of the ricotta.
- Cover with the last layer of zucchini slices:) Cover with mozzarella cheese & parmesan cheese.
- Bake at 400 degrees for 40 minutes:) Let it sit for 10 minutes or so and enjoy:)
