Low Carb Lasagna Recipe – Zucchini Lasagna Recipe
If you are living the low carb life, like I am… this low carb lasagna recipe is for you!! It uses zucchini in place of the noodles and is super easy to make all in one step. Bake it and enjoy!! My family loved the zucchini lasagna.

  1. Brown the ground turkey. Once cooked add 1 cup of marinara to the turkey and set aside.
  2. Mix 2 cups ricotta with 1 cup of marinara sauce.
  3. Grab your baking dish, mine was 9×11 and spray it with cooking spray.
  4. Line the bottom with a layer of the thinly sliced zucchini slices.
  5. Add a layer of the ground turkey mixture (about half of it).
  6. Add a layer of the ricotta mixture (about half of it).
  7. Add a layer of zucchini slices, the rest of the turkey and the rest of the ricotta.
  8. Cover with the last layer of zucchini slices:) Cover with mozzarella cheese & parmesan cheese.
  9. Bake at 400 degrees for 40 minutes:) Let it sit for 10 minutes or so and enjoy:)
