Low Carb Bruschetta 7 Ways, Perfect for Parties
I swear, parties have always been my worst enemy. While I love them, I always eat too many carbs:( Then end up with high sugar levels and have to adjust.
Even if I don’t eat too much, sometimes I’m not sure how many carbs are in all the party food, so it’s still not a great situation.
But, I recently made this fathead bread bruschetta, 7 ways!! Oh and this was a huge hit with my family.
First, make the fathead pizza dough recipe.
Then get creative with your toppings:)

- Goat cheese & roasted red peppers (from a jar)
- Goat cheese (you could substitute mascarpone or cream cheese), apple & a tiny bit of honey
- Hummus, tomato, basil & balsamic vinegar
- Cesar salad
- Ricotta cheese, prosciutto and pistachios
- Calishetta recipe
- Pesto and salami

Ingredients
Goat Cheese & Roasted Red Pepper
- 1 tube goat cheese
- 1 jar roasted red peppers
Goat cheese, apple & honey
- 1 tube goat cheese you can use the same tube as for the red pepper version
- 1 granny smith apple
- 1 drizzle honey very small (remember it's sugar)
Hummus, tomato & basil
- 1 package garlic hummus
- 1 roma tomato sliced
- 4 sprigs basil leaves
Cesar Salad
- 1 package prepared Cesar salad
Ricotta, prosciutto & pistachio
- 1 small container Ricotta cheese
- 1 slice prosciutto per piece of bruschetta
- 4 pistachios per piece of bruschetta
Pesto & Salami
- 1 jar prepared pesto
- 1 slice salami per slice of bruschetta

Instructions
- With all bruschetta options, bake one fat head pizza per 8 pieces of bruschetta.
- Once cooled, add the ingredients to the bruschetta & serve:)
