Chimichurri Sauce Recipe – Low Carb

I’m not sure about you, but chimichurri sauce is one of my favorites on steak and fish!! This chimichurri recipe is low carb, delicious and super simple.  Especially if you have an herb garden.  I’ve created all kinds of chimichurri recipes based on the herbs in my garden.  When I made this one, I had rosemary, cilantro (SO MUCH in our garden) and basil.  I had dill, but I didn’t think that would taste like what I wanted, however for a fish dish, the dill would have been awesome!!

So all I did was add some good olive oil to the herbs chopped up and then dripped in a little red wine vinegar and it was so good!! With literally no carbs.

If you want to make it spicier add a little red chili flakes, I didn’t add them because our kids aren’t a huge fan of spicy.  Which makes me sad, but it was still amazing without the red pepper flakes:)  My only mistake when making this chimichurri recipe was not making more!! I should have made more and saved it in the fridge for the next time we cook chicken, steak or fish, I bet it would be delicious on any protein and really on most veggies too!! Oh cauliflower rice with chimichurri sauce may be my next effort with the sauce recipe:)

Sauce for Diabetes steak or fish

Seriously, how good does this steak with broccoli & the chimichurri sauce look?? It was gone so quickly and I feel like most dinners at our house end up as leftovers.  Mostly because our kids aren’t the biggest eaters to start with and we serve low carb family friendly meals, but evidently I cook too much food, lol:)

Let me know when you make this sauce, because I’m pretty sure we’ll be bffs because of this chimichurri sauce recipe:)

Instructions
  1. Chop fresh herbs, add oil to the herbs in a small bowl. Then drip in the red wine vinegar and add red chili flakes if you want it spicy. Eat with steak or fish, enjoy:)
