Oh man, this slow cooker cheesy chicken recipe is a crowd pleaser! This is perfect to make tacos, or eat with a southwest salad (which is my personal low carb favorite). My kids gobble this chicken up!
This slow cooker cheesy chicken recipe makes taco Tuesday a breeze. It only has 4 ingredients: boneless skinless chicken breasts, ranch seasoning, taco seasoning and a block of cream cheese. I guess there is a 5th ingredient if you want cheddar cheese on top when you serve this on taco Tuesday.
The first time I saw this recipe, I thought, wow this is sure simple, is this for real? I tried it and oh it was easy and delicious. The other thing I do to make this recipe even easier is use one of those slow cooker liners, I’ll link to them in this post becuase then you don’t even need to clean the slow cooker.
A couple variations on this recipe I’ve made are to add salsa as well, that way it’s cheesy salsa chicken, oh man, so delicious. The other variation I’ve made is to add buffalo sauce once the chicken is all done and served the buffalo chicken in peppers and baked them or just eat the buffalo chicken however you like it. You could even add an extra block of cream cheese and buffalo sauce and call it a thick dip, this would be perfect for a party. I’ve even added them to potato skins or sweet potato skins (not as good), but the kids liked them on top of half a sweet potato.

Instructions
Add the chicken to the slow cooker. Sprinkle the ranch seasoning and taco seasoning on the chicken. Add the block of cream cheese on top. Initially I used to cut it into smaller blocks. But, now I just throw the whole block on top.
Cook 4-6 hours on low. Once the chicken falls apart easily, remove it from the slow cooker to shred the chicken with 2 forks. Place chicken back in the slow cooker, mix with the cream cheese, top with 1/2 cup of cheddar cheese and serve.
