Slow Cooker Chicken for Diabetics – Slow Cooker Salsa Chicken
OMG, this Slow Cooker Chicken Recipe for Diabetics – Slow Cooker Salsa Chicken is one of my family’s fave recipes!! I’m not sure about you, but I sure do love my slow cooker. I love that it does all the work for me and I even use the liners so I don’t have to wash the slow cooker after the meal:) This slow cooker chicken for diabetics is a great recipe for slow cooker salsa chicken.
When I made this recently, I used two types of salsa (because I had them in my refrigerator). I used mostly a mild salsa, I am feeding kids after all. I added a couple tablespoons of my favorite hot salsa from a restaurant.
Throw the chicken, salsas and spices in the crockpot and just wait until it is easily shredded. Voila dinner is ready!! I bet if I had planned ahead I could have even added some cauliflower at the end and served them up together.

- 1 lb boneless skinless chicken breasts
- 2 cups mild salsa you could make it spicier if you like
- 2 Tbs spicy salsa
- 1 Tbs cumin
- 1 bag cut cauliflower

- Add chicken, salsa & cumin to the slow cooker. Cook for 4 hours on low or until the chicken is able to be shredded.
- Shred and add back to salsa to coat. If you want to add cauliflower add now and cook for 10 minutes.
- Serve with your favorite salad greens or cauliflower rice for the low carb version. My kids eat it with tortillas as tacos:) Enjoy:)
