Slow Cooker Salsa Chicken – Slow Cooker Chicken for Diabetics
Slow cooker salsa chicken is a perfect slow cooker recipe for diabetics and the whole family!! I served mine over lettuce, but you could serve it up with cauliflower rice for a low carb variation & my kids had tortillas, dinner is served!!

  1. Add chicken, salsa & cumin to the slow cooker. Cook for 4 hours on low or until the chicken is able to be shredded.
  2. Shred and add back to salsa to coat. If you want to add cauliflower add now and cook for 10 minutes.
  3. Serve with your favorite salad greens or cauliflower rice for the low carb version. My kids eat it with tortillas as tacos:) Enjoy:)
