Low Sugar Coleslaw – Diabetic Coleslaw
It’s so funny, I’ve never been a huge coleslaw fan, mostly because they can get sweet and then aren’t diabetic coleslaw. Also, I’m not a huge fan of things that are really wet & gloopy. But, this low sugar coleslaw recipe is light, refreshing and packs tons of flavor.
Serve this coleslaw with the low sugar, slow cooker barbecue chicken🙂

Ingredients
- 1 bag coleslaw mix I buy this all ready to go:)
- 1/4 cup avocado mayo you could substitute regular mayo or plain greek yogurt
- 2 Tbs granulated onion
- 2 Tbs apple cider vinegar
- 2 Tbs dijon mustard
- 1/2 tsp honey you can eliminate this it is just a big more tart
- 1/2 tsp sea salt not necessary if you are low sodium
- 1/4 tsp black pepper

Instructions
- Mix all ingredients without the bagged coleslaw. Let sit 3 minutes, so the onions get plump.
- Add bagged coleslaw and mix!! Enjoy:)
