Healthy Chicken Fajitas – Diabetic Chicken Fajitas
I love dinners that can be baked in the oven on one pan. Here’s the best one yet… Healthy Chicken Fajitas!! As always, I cover my baking sheet in foil to save the mess & all the ingredients can go on one pan!!
I suggest cutting your own chicken slices, you can buy the chicken tenders, but I hate the tendons in them.
Serve over greens as a salad or fill up on the yummy roasted peppers & onions, if your family eats onions, mine doesn’t:(

Ingredients
- 1 lb chicken breasts Sliced
- 3 peppers sliced
- 1 chili powder sliced
- 3 Tbs avocado oil
- 1 onion sliced (not in my photos)
- 1 tsp cumin
- 1 can diced green chiles

Instructions
- Slice chicken and veggies.
- Add all ingredients to a bowl or straight to pan, mix until all ingredients are coated with the oil & spices.
- Bake at 400 degrees for 20 minutes, or until chicken is cooked throughout.

Red peppers are also tricky when cooked….roasted, grilled or fried. High in sugar when cooked compared to raw ones………particularly,. the red ones
I prefer the orange or yellow ones for flavor. The green ones don’t love my tummy.
