Healthy Camping Dinner – Diabetic One Pan Dinner
When I was trying to name this one, I kept thinking “tin foil dinners”, but that doesn’t sound very appetizing. So, how about Healthy Camping Dinner, an easy diabetic one pan dinner.
I like one pan dinners, I even wrap the baking sheet in foil, so there isn’t much clean up at all:)
You can make this recipe with lean ground beef (if you eat beef), if not it works perfectly with lean ground turkey. I use whatever I have in my freezer.

Ingredients
- 1 lb lean ground turkey or lean ground beef works (i buy the organic one)
- 1 Tbs onion powder
- 1 Tbs garlic powder
- 1 Tbs dijon mustard
- 3 peppers sliced
- 1 onion sliced
- 2 Tbs avocado oil

- 1-2 potatoes sliced
- 1 cup mushrooms halved

Instructions
- Slice all veggies and place in bowl with avocado oil & mix.
- Create 4 foil packets, spread the veggies evenly in packets.
- Mix meat with onion powder, garlic powder & dijon mustard. Optional 1Tbs liquid smoke. Mix together and make meat logs.
