Fall Spinach Salad – Healthy Diabetic Salad
This one is a favorite healthy salad for diabetes!! I’m not the biggest salad fan, but I love adding my favorite ingredients to salads to make them more appealing for me:)
This healthy diabetic salad includes: greens (you can use spinach or mixed greens or even romaine… side note my Mom will not eat any spring greens, only romaine), apples (i love apples with the crunch and a little sweet hint), and walnuts (tons of omegas and good stuff in nuts).
Other optional items you could add: berries, craisins or raisins, also avocado adds a creaminess to the salad. Oh and cheese, how could I forget the cheese?? I like goat or blue cheese for this salad, but add the cheese you love the most.

- 2 cups greens I used spring greens & spinach mixed bag of salad
- 1/2 cup walnuts whole or chopped
- 1 apple sliced I used a honey crisp apple
- 1/2 cup cheese of your choice (i like goat or blue cheese crumbles)
- 1/2 cup olive oil Could substitute avocado oil
- 1/4 cup apple cider vinegar
- 1/8 cup water
- 1 tsp granulated onion
- 1 tsp garlic powder
- 1 tsp italian seasoning
- 1/2 tsp red chili flakes

- To make dressing, add all ingredients to a mason jar.
- Shake well before pouring over salad.
- Add greens, apples, walnuts & cheese of your choice. Plus any additional items you like: berries, cranberries, avocado or other fall veggies.
- Toss & serve:)
