Simple Mills Baking Mix Review – ⭐️⭐️⭐️⭐️⭐️
As most of you know, I love to substitute almond flour for all purpose flour for a multitude of recipes. I have another post about why almond flour is healthy for diabetics (link).
Check out the post for all the great reasons almond flour is good for you. I talk about the lower carb count, almonds providing more nutrition than traditional flour and a ton of other reasons.
Since you are reading this, I’m sure you see the value in eating lower carb as a diabetic. I rarely eat normal baked goods and limit the amount of bread I eat as well. I’m not a fan of the rollercoaster effect in my blood sugars that eating high carb meals creates.

However, sometimes pulling out a recipe and making baked good from scratch is a bit of a pain in the rear.
So in walk the simple mills baking mixes. For starters, the simple mills baking mixes ARE DELICIOUS:) Secondly, they have minimal ingredients. Most importantly, the ingredients are all whole ingredients, no chemicals or junk. Most importantly, my kids gobble them up and I feel good that they are eating REAL FOOD. I’m not a fan of them eating carb loaded junk.
So here are the mixes I love:
Pumpkin Muffins and Bread (LINK) – we’ve made it both ways and both the muffins and loaf were moist and delicious. I usually make the muffins though because I can put them in the school lunches. They also seem to disappear faster than the loaf.
Banana Nut Muffin and Bread- We love this one and the pumpkin one equally. These also disappear quickly.
My absolute fave: Almond Flour Pancake & Waffle Mix. This is the easiest to mix up quickly and again, my kids devour them. I don’t even mind making them for dinner because the almonds have protein, so I feel like they are getting a good meal. I usually serve them with bacon or something else, but such a great quick dinner after activities.
Last, but not least: Almond Flour bread Mix. This is good, but it is almond flour bread, so it’s not as light and fluffy as a traditional bread. Since we don’t usually have bread with dinner, this artisan bread feels like a great treat. I make it as a flatbread loaf with rosemary and garlic. We all enjoy it. Remember, it does have carbs, so be aware to pay attention to your blood sugar and medicate accordingly. I’d say it’s a healthy alternative to traditional bread.

My review of the simple mills baking mix: I love all these mixes. The muffin mixes are perfect for the school lunchboxes, the waffle and pancake mix is seriously divine and makes for a quick and easy dinner and the artisan bread feels like a treat at dinner. One note, Simple Mills seems to be coming out with new products all the time. I love the cheddar crackers, my kids like the graham crackers and I noticed that they even have a pumpkin pancake mix, although I haven’t tried it. Some products will always be better than others, but I would give their products a try every time.
