Low Carb Mexican Meatballs – Diabetic Chicken Chipotle Meatball Recipe
These low carb Mexican meatballs will be a favorite of your weeknight dinner table:) I created this diabetic chicken chipotle meatball recipe to keep southwest flavors on our dinner table without it being tacos or taco bowls … again. Â That’s a standard Tuesday night dinner at our house!!
I’m not sure about you, but I love meatballs!! Although, most meatball recipes call for breadcrumbs and I avoid white processed carbs not because I’m totally gluten free, but because they lack any nutritional value or real reason to eat them. Â Every time I eat white processed carbs aka breadcrumbs or bread in general I feel pretty sluggish and they always require more insulin than I’d really like.
Besides taco bowls, my baked turkey meatballs (super easy Italian meatballs, low carb of course) are super popular for weeknight dinner at our house, but again I gotta keep trying new things or else I won’t have any new recipes to add tot he blog either.  LOL:)
This diabetic chicken chipotle meatball recipe is super easy, here’s a photo of the ingredients in the bowl before i mixed them with my hands.
Then, I just balled the meatballs and added them to a sprayed foiled sheet pan and baked these, super easy!! And I mixed up an avocado sauce in the blender that was delish and full of omegas!! It was a little runnier than a traditional guacamole, but amazing for dipping the low carb Mexican meatballs in.
Once baked these beauties were stunning!!
Oh and the sauce… I know I mentioned it before, but it was SO EASY:) I added 1 large avocado, 1/4 cup of avocado oil, a handful of cilantro and some garlic powder & it was DELISH!!

- 1 lb ground chicken breast
- 1 Tbs granulated onion use onion powder if it's all you have or fresh onions
- 1 Tbs garlic powder or tube garlic
- 1 tsp chili powder
- 1.5 tsp cumin
- 2 tsp adobo sauce from the can of adobo chiles
- 1 adobo chiles chopped I saved the rest of the can in the freezer
- 2 Tbs chopped cilantro
- 1 egg
- 1/4 cup oats
- 1 large avocado
- 2-4 Tbs avocado oil I added until it would blend, but if using a food processor, you'll need less oil
- 1/4 cup cilantro
- 1 tsp garlic powder

- Preheat the oven to 350 degrees. Add all ingredients to a large bowl.
- Mix with your hands. Roll balls in the size your choice, mine were about 2 Tbs. Add to a greased sheetpan.
- Bake meatballs for 30-35 minutes or until done.
- Enjoy:)
- For the sauce, add avocado, avocado oil, cilantro and garlic powder to blender or food processor and blend. It's great for dipping the meatballs:) Optional: you could add chili powder or cayenne to the dipping sauce, I kept it cool for the kiddos.
