Low Carb Mexican Meatballs – Diabetic Chicken Chipotle Meatballs
Low Carb Mexican Meatballs aka Diabetic Chicken Chipotle Meatball Recipe is so easy and perfect for a weeknight dinner:) They take 5 minutes to prep then bake them for 35 minutes and enjoy:) If you want to make your own dipping sauce you can, or I’ve included my avocado sauce that is healthy and delicious, and all so low carb, perfect for diabetes.

Ingredients
Avocado dipping sauce
Instructions
  1. Preheat the oven to 350 degrees. Add all ingredients to a large bowl.
  2. Mix with your hands. Roll balls in the size your choice, mine were about 2 Tbs. Add to a greased sheetpan.
  3. Bake meatballs for 30-35 minutes or until done.
  4. Enjoy:)
  5. For the sauce, add avocado, avocado oil, cilantro and garlic powder to blender or food processor and blend. It’s great for dipping the meatballs:) Optional: you could add chili powder or cayenne to the dipping sauce, I kept it cool for the kiddos.
