Low Carb Bagels Recipe- Diabetic Bagel Recipe
This low carb bagels recipe is a perfect diabetic bagel recipe too!! The recipe is low carb and no sugar AND tastes pretty darn close to a real bagel!!
If you’ve been following my diabetic journey, I’m been diabetic for the last 15 years. I’m a type 1, my Dad has been a type 1 for my whole life and I’ve seen his journey and the diabetic complications caused by high sugar levels. His idea of keeping his sugars low is a much higher blood glucose than mine.
In the last couple of years, I’ve decided to cut out processed carbs. You may not want to hear this plan of action, but I had noticed that every time I ate bread or a bagel or cereal, I would take the correct units of insulin for the amount of carbs and it never seemed to be quite enough, then once it did kick in, my sugars would drop. So the processed carbs would make my sugars skyrocket and plummet. Which is about the worst feeling, I didn’t want to experience this anymore.
Besides avoiding the sugar rollercoaster, I had noticed in the past 5 years or so, even though I ate the correct amount of calories, I had packed on a few extra pounds (right around 8 pounds), which to you may not seem like a lot, but I’m only five foot 2 inches tall:)
After reading the New Evolution Diet, I’m rethinking grains in general. In a nutshell, the author talks about grains not being available to gather – hunter population 40,000 years ago and our bodies haven’t evolved to absorb the nutrients. Here’s my review of The New Evolution Diet Book.
The other point the author makes is about carbs. This really sparked my interest. He said, every time we eat a carb, our bodies throw out insulin (well maybe not our diabetic bodies, but we inject the insulin) to combat the carbohydrate. But, here’s the real kicker, since the insulin digests the glucose from the carb, our brains then send out the signal to eat MORE carbs so some of the glucose gets to the brain. But it’s a cycle so, the more carbs we eat, the more insulin required and the more times our brain will tell us to EAT MORE!!
After that long winded story, I’ve decided to cut out the processed grain carbs. Which is why I’m making these keto bagels:)
These low carb bagels were super easy to make and my family loved them!! So that’s always a win.

- 1 1/2 cups almond flour
- 2 tsp baking soda
- 1 Tbs xanthan gum powder
- 2 1/2 cups mozzarella cheese
- 2 oz cream cheese
- 2 large eggs
Ingredients

- Mix dry ingredients together.
- Add mozarella & cream cheese to a bowl and microwave for 1 minute. Mix. Then microwave in 30 second intervals until melted.
- Add dry ingredients and mix well. If it gets away from melted seeming, microwave another 30 seconds. & Mix.
- Once warm (not hot), add eggs and mix.
- Form into 6 balls and create a bagel shape on a baking sheet. Add toppings: I used sea salt and everything bagel seasoning.
- Bake for 12-20 minutes at 400 degrees based on how golden you want your bagels. I made mine pretty toasty.

I’d love to try this recipe – what can I use instead of xanthan gum? Would egg whites, chia seed gel or flax seed gel work?
Hmm… I’m not really sure, you could try chia seed gel or flax seed gel. Let me know if one of them works.
