Charred Brussel Sprouts Recipe – Healthy Brussel Sprouts Recipe for Diabetes

Oh brussel sprouts, how I never thought I’d like you!! Like, at all:)  But, then one night I was out at a restaurant and someone ordered charred brussel sprouts and they were like HEAVEN!!  This charred brussel sprouts recipe, healthy brussel sprouts recipe for diabetes is a perfect side dish for any meal!!

I make a variation of this recipe about 3 times a week with our dinner.  For dinner, we usually eat a lean protein and then add a veggie side and call it good!! If you’ve followed me for a long time, I’m all about the simplest meals because there’s no reason to spend more than 30 minutes actively cooking.  My belief is we want to feed our bodies nutritious food, but it shouldn’t require a five star chef!!

My kids will sometimes eat this charred brussel sprouts recipe, but if they don’t feel like it, I always have a can of veggies around for their side, it’s just easier that way!!  I like to feed them corn or peas as a starchy veggie because they are super active and need the carbs (that I don’t need).  They will also eat canned green beans, so I think that’s a great green vegetable option for them!!

Additions for the chart brussel sprouts

I love using avocado oil for this recipe and here’s why I love avocado oil!! 

A couple optional tips for this healthy brussel sprouts recipe for diabetics, you can add:

  • a couple slices of bacon or turkey bacon chopped to begin with before you add the sprouts:)
  • I add an acid at the very end of the recipe after I pull them out of the oven. You can choose a vinegar (red, white, champagne, balsamic) or a citrus, I love lemon or lime.
  • Other spices you could always add: red pepper flakes (for spice), garlic powder or fresh garlic, onions (my husband hates them, but they’d be delicious), Italian seasoning, parmesan at the end… the options for this charred brussel sprouts recipe are endless!!

These charred brussel sprouts could also be a great base for any bowl, add a meat on top and call it dinner (or lunch, really)!!

  • 2 Tbs avocado oil
  • 1 lb brussel sprouts slice in half or if small, just cut off the stem. You want them to be as evenly sized as possible
  • 1 1/4 tsp truffle oil sea salt
  • 2 Tbs lemon juice You can substitute any vinegar or other citrus

Instructions
  1. Chop your brussel sprouts in evenly sized pieces. I usually chop the ends off and then in half. Then if I have some smaller ones, I just chop off their ends and leave them whole.
  2. Heat your cast iron skillet. Add 2 Tbs oil.
  3. Once hot add (bacon if you using), cook to half done. Add brussel sprouts face down. Cook 3 minutes. Check the sprouts, you want a char. If not charred, don't move them around.
  4. Once charred on one side, stir them around. Add another 1 Tbs of oil if necessary.
  5. Once moved around the pan, add seasonings. Cook 3-4 minutes.
  6. Once charred on both sides, move to the oven under the broiler on high. Watch them carefully this only takes 1-2 minutes!!
  7. Once they look as charred as you want them, take out of the oven and add your lemon juice (or other acid), stir and enjoy!!
