Zucchini Boats – Zucchini Pizza – Healthy Zucchini
Oh my.. this recipe will change your life, oh and it’s totally kid approved!! My kiddos gobbled this low carb, delicious, zucchini recipe last night. Call it zucchini pizza and they will love it!!

Ingredients
- 4 small zucchinis 2-3 larger ones
- 3 Tbs avocado oil
- 1 Tbs garlic powder or a garlic powder blend

- 1/4 cup marinara sauce
- 1/4 cup mozarella cheese

Instructions
- Preheat the oven to 425 degrees.
- Cut the ends off the zucchini and cut lengthwise.
- Add avocado oil to sheet pan. I cover my sheet pan in foil to make clean up easier:)
- Move the zucchini around in the oil, to coat the flat sides. Spray the curved sides with cooking spray.
- Bake for 15 minutes or until the zucchini is fork tender.
- Take the pan out of the oven, flip the zucchini over. Spoon marinara and mozzarella on the zucchini.
- Cook for another 5 minutes or until toppings are warm. Enjoy:)
