Diabetic Tuna Salad- Healthy Tuna Salad
When you think of tuna salad, you may not immediately think of “healthy”. But this healthy tuna salad is perfect for diabetics. I use avocado mayo, if you haven’t tried it yet, it’s life changing:)
Avocados are super healthy, have omegas and in general all kinds of good fats (yes, I’m not a nutritionist, but I know avocados keep me healthy and feeling full).
I use the vegetables I have in my kitchen, so the recipe can change. I love diced peppers (red peppers are my absolute fave), cucumbers, celery (I don’t always have celery, so this is definitely hit and miss) and I love dill pickles.

- 1 12 oz can solid white albacore
- 2 eggs hard boiled & chopped I use my egg slicer both directions for a quick chop
- 3 Tbs avocado mayo
- 3 tsp dijon mustard more if you like mustard
- 1 Tbs granulated onion
- 4 Tbs dill relish
- 1/2 cup chopped peppers I like red & yellow peppers
- 1/4 cup chopped cucumber
- 1/4 cup chopped celery
- 1/4 cup chopped dill pickles

- Mix all ingredients together in a bowl.
- Refrigerate until you serve:)
Healthy Tuna Salad can be served on top of a bed of greens, as a salad. Or with other veggies and sliced hard boiled eggs as pictured (this is my favorite lunch!!).
