Diabetic Apricot Jam Recipe – No Added Sugar Apricot Jam Recipe
Have you ever made a diabetic jam? This is a great diabetic apricot jam recipe aka a FABULOUS no sugar added apricot jam recipe.
Back story, we have a ton of fruit trees at our house. When we first remodeled our old house (built in 1958), I wanted to have plenty of trees that provided us with fruit because maybe secretly I’d love to live on a farm. 11 years later, our trees all produce some sort of fruit. The apricot trees are by far one of my faves, the downside is all the fruit is ripe about the same time, so i have to come up with things to make, to not let the apricots go to waste.
That’s how I came up with this recipe!! At first, I thought I could just make a jam using stevia, which is what I used. But, my patience got the best of me, so I added chia seeds to thicken the jam. I’m pretty sure no one would know they were there except I used black chia seeds because it’s all I had:) By the way, this diabetic friendly jam is seriously delicious!!
Oh and my next recipe for the blog will include the jam in an almond flour cookie!! Yay, gluten free, low carb and full of good nutrients:)
As a diabetic, jams and jellies just seem off limits to me:( It’s because I avoid “sugar free” products because they contain fake sweeteners and while I would like to say that I’m against fake sugars because they are fake (I sort of am), the real life issue is when I consume fake sugars, they leave a sugary taste in my mouth which makes me crave actual sugar, which is about the worst thing ever!!

- 2 lbs apricots roughly chopped, leave the skins on
- 1/4 cup water
- 3 Tbs truvia
- 1 tsp vanilla extract
- 2 Tbs chia seeds white chia seeds if you want prettier jam
- 1/2 lemon squeezed for the juice
Ingredients

- Roughly chop the apricots and add to a small saucepan.
- Add water, vanilla, lemon juice and truvia and cook on medium heat for 25 minutes.
- Add chia seeds and stir for 5 minutes. Remove from the burner and let the jam sit for 15 minutes.
- Check consistency to verify it's thick enough. If it's not thick enough add another 1/2 - 1 Tbs of chia seeds and let sit another 15 minutes.
- Once you've reached the desired thickness, jar and enjoy:)
