If you’d prefer a wrap to lettuce cups, the sprouted grain tortillas are a healthier alternative to regular tortillas.
This recipe uses the Diabetic Easy Baked Chicken (which makes for a great dinner too), feel free to substitute rotisserie chicken or whatever chicken you have.

Ingredients
- 1 lb chicken breasts
- 1 tsp apple cider vinegar
- 1 tsp onion powder substitute granulated onion
- 2 tsp dijon mustard
- 1 cup grapes halved
- 1/4 cup pistachios
- 1/2 cup celery chopped
- 1/4 cup avocado mayo or plain greek yogurt

- Add all ingredients in a large bowl and mix together.
- Chill in the refrigerator for at least 10 minutes.
- Serve on lettuce leaves as chicken salad cups or over a bed of lettuce with your healthy dressing as a salad
