Egg salad can contain a lot of mayo, this version the healthy egg salad version for diabetics is made with avocado mayo or plain greek yogurt. These are both a source of good fats, which will help keep you full as well.
Diabetic egg salad is a go-to for a quick 5 minute lunch, high in protein and flavor!!
Serve it by itself, in a wrap (low-carb of course) or in lettuce leaves as egg salad lettuce wraps!

Ingredients
- 4 hard boiled eggs
- 1/4 cup avocado mayo substitute plain greek yogurt
- 1 Tbs dijon mustard
- 1 Tbs white vinegar
- 1 Tbs garlic powder
- 1 Tbs onion powder
- paprika garnish

- Chop eggs into bowl.
- Add all other ingredients and mix.
- Serve over salad or lettuce leaves for egg salad lettuce wraps:) Garnish with paprika.
