Healthy egg salad recipe, this is an easy go-to lunch recipe!!  It’s filled with protein and good fats:)

Egg salad can contain a lot of mayo, this version the healthy egg salad version for diabetics is made with avocado mayo or plain greek yogurt.  These are both a source of good fats, which will help keep you full as well.

Diabetic egg salad is a go-to for a quick 5 minute lunch, high in protein and flavor!!

Serve it by itself, in a wrap (low-carb of course) or in lettuce leaves as egg salad lettuce wraps!

  1. Chop eggs into bowl.
  2. Add all other ingredients and mix.
  3. Serve over salad or lettuce leaves for egg salad lettuce wraps:) Garnish with paprika.
