This is such an easy, every night recipe… It’s delicious and low carb. I modified this recipe from fathead.com, so this is considered fat head pizza. Perfect for those of us with diabetes.

  1. Preheat the oven to 425 degrees.
  2. In a heat safe bowl, microwave the mozzarella cheese with the cream cheese cubed up for one minute.
  3. Mix the cheeses together, then microwave for another 30 seconds. It should be very hot and mixable. If not, heat up again for 20 seconds in the microwave.
  4. Mix egg & almond flour in with the cheeses.
  5. Spread the dough with wet hands on parchment paper or a stone pizza pan (that’s what I used).
  6. Spread seasonings on dough & poke the dough with fork holes all over.
  7. Bake for 10 minutes, check for bubbles in the dough and poke with a fork.
  8. Bake for another 10 minutes or until golden.
  9. The pizza crust is now cooked, you can slice as bread sticks.
  10. Or add sauce & toppings to pizza. Put pizza in the oven just to warm toppings.
