Light Italian Meatball Soup – Diabetic Italian Wedding Soup
This soup is a a warming light soup with tons of veggies and ground turkey for protein. With diabetes, sometimes it feels like we can’t eat our favorite foods, but this soup is pure comfort food!!

Instructions
  1. Chop the chopped veggies. Feel free to add celery, zucchini or any other veggies you have on hand.
  2. Sauté the veggies for 3-5 minutes
  3. Add chicken broth and diced tomatoes (with juice), bring to a boil.
  4. Mix all the turkey meatball ingredients. Make small meatballs, in this version, the meatballs were smaller than a golf ball. (the smaller the meatballs, the faster they cook).
  5. Drop meatballs in boiling soup one at a time. Cook for 20 minutes, or until meatballs are cooked. Add broccoli for 3 minutes and serve.
  6. If you want to add kale at the end it only needs about 1-2 minutes to cook.
