Low Carb Pesto Chicken Pasta – Diabetic Pesto Chicken Pasta Recipe
As a diabetic, I believe in living a low carb life. This low carb pesto chicken pasta recipe is delicious!! I saw a similar recipe on a tv show I was watching and came up with this diabetic pesto chicken pasta recipe.
I choose to live a low carb lifestyle because when I eat processed carbs (crackers, cereals, breads, other boxed products) my sugars skyrocket, which requires me to take insulin and then my sugars tend to fall quickly from these types of carbs. This blood sugar roller coaster is the worst because then I overeat when my sugars are low and the whole situation happens again:(
I used zucchini for the noodles. With my spiralizer, I was able to make zucchini noodles that were delicious!! Sometimes I sauté them in avocado oil, but this time I used a little chicken broth in the microwave and cooked them to al dente, so they had a little crunch. For the pesto sauce for the low carb pesto chicken pasta, I used walnuts which is unconventional but I had walnuts in my pantry so I figured I’d make them work. In the end, the walnuts in the pesto were DELICIOUS!!
I used a blender to make the pesto sauce, I started with 1 cup of walnuts, 1 cup of parmesean cheese and one cup of basil leaves (from my garden, yay!) and two cloves of garlic then I drizzled the olive oil in until it was saucy while pulsing the blender.
If you have jarred pesto in your pantry, totally use that!! I had a ton of basil from our garden, so I thought I should use it up.
