Diabetic apricot jam recipe aka no sugar added apricot jam recipe:) This jam is delicious and simple to make. Let the apricots cook down with the other ingredients, then add chia seeds to thicken to your liking and enjoy the jam guilt free!!

  1. Roughly chop the apricots and add to a small saucepan.
  2. Add water, vanilla, lemon juice and truvia and cook on medium heat for 25 minutes.
  3. Add chia seeds and stir for 5 minutes. Remove from the burner and let the jam sit for 15 minutes.
  4. Check consistency to verify it’s thick enough. If it’s not thick enough add another 1/2 – 1 Tbs of chia seeds and let sit another 15 minutes.
  5. Once you’ve reached the desired thickness, jar and enjoy:)
